PAYAS
- half gallon of whole milk
- fistful/handfull of mohan bhog rice - well rinsed
- cinnamon
- cloves
- cardamom
- bay leave
- butter
- 3 Tbsp gur
- pistachios - slivered
- 1 Tbsp golden raisins - rinsed
- white sugar
- boil the milk, stirring continuously in a non-stick pot - medium/high heat - don't stop stirring until decreased by approximately 1/4
- in a smaller pot, put a knob of butter and stir the rice in it just to coat. add a bay leaf, couple of cardamom pods, cinnamon stick, and 2 cloves - remove from heat
- once milk is reduced, add the rice and allow to cook, continue stirring
- milk will reduce to half of its original, approximately
- add raisins
- add gur, stirring until melted
- when gur is melted, taste for sweetness, add sugar as needed
- serve warm or chilled
- garnish with pistachios
