Celebrate with Payas

PAYAS
  
  • half gallon of whole milk
  • fistful/handfull of mohan bhog rice - well rinsed
  • cinnamon
  • cloves
  • cardamom
  • bay leave
  • butter
  • 3 Tbsp gur
  • pistachios - slivered
  • 1 Tbsp golden raisins - rinsed
  • white sugar

  1. boil the milk, stirring continuously in a non-stick pot - medium/high heat - don't stop stirring until decreased by approximately 1/4
  2. in a smaller pot, put a knob of butter and stir the rice in it just to coat. add a bay leaf, couple of cardamom pods, cinnamon stick, and 2 cloves - remove from heat
  3. once milk is reduced, add the rice and allow to cook, continue stirring
  4. milk will reduce to half of its original, approximately
  5. add raisins
  6. add gur, stirring until melted
  7. when gur is melted, taste for sweetness, add sugar as needed
  8. serve warm or chilled
  9. garnish with pistachios
